Maktub
Maktub means «it is written». The kitchen cooks the Levant — chickpea, sesame, lemon, olive oil, spices toasted the same morning — and serves it the way the Valley eats: in a tortilla, by hand, without ceremony.
Everything is made to order. The shawarma comes off the spit when you ask for it and the falafel goes into the oil at that moment, which is why it arrives crisp and not warm.
